Ed Wilson is a chef and restaurateur based in London. He runs two restaurants with his wife and business partner, Josie Stead.
Brawn, opened 2010, is an established neighbourhood restaurant on Columbia Road, East London, and is considered one of London’s leading restaurants, renowned both locally and internationally for its food and wine offer. Ed’s love of sourcing the best ingredients has forged strong relationships with growers, farmers and wine makers to ensure that the finest seasonal ingredients and wines make the menu and wine list at Brawn. The food is always culturally linked to the extensive travels of Europe that Ed has done and his menu’s reflect those journeys.
Sargasso, an informal seafood spot on the north Kent coast in Margate opened in 2020 to much acclaim. Here the focus is on seafood and vegetables and takes inspiration from the European coastlines.
With 25 years of restaurant experience in London alone, Ed has forged a dynamic, creative and relevant approach to hospitality. He was a founding partner in the Terroirs group of restaurants that established the natural wine movement and pioneered a style of eating and drinking that has filtered down throughout London and the rest of the UK.
