Pine is Cal and Siân Byerley's debut restaurant at Vallum Farm, Wallhouses, Northumberland, which gained a coveted first Michelin star and a Michelin Green star within eight months of opening, whilst also being rated as exceptional by the Good Food Guide and entered the prestigious French gastronomic list, La Liste for the first time in 2024.
The restaurant embodies elements of the varied landscapes surrounding it; rolling fields, dense pine forests, rugged moors, and stunning coastline - a rich larder from which to harvest the raw ingredients to create dishes for its guests.
Seasonality is the main cornerstone of Cal’s food ethos, and naturally growing, foraging, pickling, and preserving play a big part in all that he creates. He seeks to maximise the availability of produce and enhance the flavours available to him throughout the year.
He started his career in the kitchen working at the nearby Robin Hood Inn at the age of 16, his interest in food quickly came to the fore and as he embarked on a culinary career in some of the UK’s best restaurants, working his way through the ranks to become Head Pastry chef working alongside Kevin Tickle at Michelin-starred Forest Side and before that at Simon Rogan’s Rogan & Co.; where he discovered his obsession for pastry and bread making.
Cal is joined by Pine's Head Chef, Ian Waller, originally from Saddleworth, Ian began his career working in some of the finest hotels in the North-West and Yorkshire, his interests in homegrown and locally sourced produce led him to Michelin-starred Forest Side, Grasmere, it was during this time that Ian met Cal whilst fulfilling his duty as Sous Chef, eventually becoming head chef before a move to London.
Together Cal and Ian have co-created the food offerings at Pine, working with ingredients grown in their onsite kitchen garden as well as foraging in the Northumberland landscape and utilising the best Northumberland has to offer.
Pine’s menus are based around their shared common principles of using the best seasonal local ingredients sourced from independent suppliers, nose-to-tail butchery, and the extensive use of preservation techniques, to both minimise waste and to cook as sustainably as possible.
How to Book
The Obsession25 online booking registration is now closed, and all restaurant tables have been allocated.
However, there’s still hope! Plans can change, and cancellations do occur. If this happens, we will prioritise contacting those who previously applied for tickets through the ballot.
Evening Details
Arrival 7.15pm for 8.00pm

- Louis Roederer Collection 245 Champagne and canapé reception
- Five course signature menu
- Freshly ground Colombian Huila & El Salvador Blend Coffee or a selection of Teas served with Hand Crafted Chocolates

The Obsession Food Festival
Obsession first took place in 2001 and was created as a celebration of great food, wine and a meeting of friends, old and new.
From that first event, its size has grown but the ethos is still very much the same; a completely memorable culinary experience with some of the world’s most innovative chefs creating unique Obsession menus for guests to enjoy at Northcote.
