Gary Jones is a legend. He is the professionals’ professional, the chefs’ chef. He has been at Le Manoir aux Quat’Saisons since 1999. Raymond Blanc may be the founding father and presiding spirit of this great institution, but it’s Gary who actually steers the kitchen of 45 chefs, who keeps the menu moving on, keeps the standards up and keeps the Michelin stars and other awards, among them Condé Nast Traveller UK Gold List Best Hotel in World for Food 2007, Sunday Times ‘Ultimate 100 British Hotels’ Best Foodie Hotel 2013, BMW Square Meal Awards 2013 Winner of Best UK Restaurant, Trip Advisor® 2013 Traveller’s Choice™ Restaurant Awards Favourite Fine Dining Experience in UK, Gary is also a Named ‘Grand Chef’ Relais & Chateaux. Obsession gives him a rare opportunity to step away from the celebrated organization that is Le Manoir aux Quat’Saisons, and enjoy himself on a more personal stage. His cooking has all the classic French discipline and technique you’d expect from someone who has worked in the Waterside Inn and Waldo’s at Cliveden as well as Le Manoir. But Gary is no culinary diehard. The menu at Le Manoir has never stood still. On the strong foundations of the French haute cuisine, you can find influences from India, Asia, Italy, and even Britain. Gary has always had an open mind to modern technologies and developments, just so long as they serve the food.
