Vivek Singh is one of the most successful and respected modern Indian chefs in the country, with three renowned London restaurants to his name - the authentic dining experience of The Cinnamon Club, the City’s Cinnamon Kitchen and Cinnamon Soho.
His refined approach to Indian cuisine has changed the perception of Indian food in the UK and his success and reputation has continued to grow with the publication of five cookbooks, media appearances and regular guest slots on BBC’s Saturday Kitchen.
Growing up in India, food was at the centre of everyday life. From festivals to wedding celebrations, huge feasts were commonplace in his hometown of Asansol in India’s West Bengal region and it was here that he fell in love with the sights, smells and celebration of food.
The strong Anglo influences in Asansol meant Christian festivals were celebrated as well as Hindu ones which allowed Vivek exposure to many different cuisines. This was vital to his experience as a chef, developing a personal style which married Indian spices and flavours with Western techniques and ingredients.
Today his restaurants uphold the core philosophy that “food does not exist in a void; it’s not timeless and does not operate in a vacuum. My journey from Asansol to Westminster has taught me that everything changes all the time. As a result I am always looking to evolve the food we cook, responding to new ingredients, techniques and influences to create menus and dishes that are mindful of Indian tradition but are always adapting and changing to keep in step with the times.”
