Angela Hartnett OBE
Angela Hartnett OBE is Chef-Patron at Murano, Café Murano and Hartnett Holder & Co, one of the UK’s most loved chefs and restaurateurs, Angela is known for her sophisticated yet simple, Italy-inspired cooking. Born in Britain, her passion for good, honest food and the best ingredients was instilled in her by her Italian grandmother and mother.
Angela came to her chef’s career after first studying a degree in history at Cambridge Polytechnic. She then worked in a number of small family-run restaurants in the kitchen and in fish and chip shops before joining Midsummer House in Cambridge as a waiter. Here she ‘blagged’ a role in the kitchen, where she learned on her craft on the job. Angela then did a stint abroad working as a Chef at the Tamarind Cove restaurant in Barbados. In 1994, she returned to the UK, and did ten stages in restaurants across London, including a trial at Gordon Ramsay's new Aubergine restaurant. The male brigade bet that Hartnett would not last the first week, but she loved the food, loved working with Gordon in the best restaurant in London – it was thrilling. This heralded the start of 17 years working for Gordon Ramsay. She later joined Marcus Wareing as his sous-chef at Petrus, rising to head chef after seven months, when it won a Michelin star. After launching Amaryllis in Scotland with David Dempsey in 2001, Angela helped with the launch of Gordon Ramsay's Verre in Dubai. From 2002 to 2007, Angela was chef-patron of Angela Hartnett's Menu at The Connaught, where she netted her first Michelin star in 2004.
In 2007, Angela was awarded an MBE for services to the hospitality industry, and the following year she opened her own restaurant, Murano in Mayfair, where she is Chef Proprietor. It was awarded Michelin star two months after opening, which it has retained since, and also holds four AA rosettes. In 2012, Angela opened Hartnett Holder & Co in partnership with Robin Hutson and Chef Luke Holder. In September 2013 Angela launched the critically acclaimed Merchants Tavern in Shoreditch, in collaboration with Head Chef Neil Borthwick, and Canteen founders, Dominic Lake and Patrick Clayton-Malone. In November of that year she opened the similarly championed Café Murano, a brassier little sister to Murano, where she creates the menu with Sam Williams as Head Chef. In June 2015, she opened a second Cafe Murano on Tavistock Street, Covent Garden, and in 2019 she opened a third site in Bermondsey.
Angela has two cookbooks to her name, Cucina (2007) and Angela’s Kitchen (2011) and is a regular on our TV screens, as a judge on Great British Menu and Best Home Cook. She was awarded an OBE in the New Year's Honours 2021 for her services to the hospitality industry and to the NHS during the Covid-19 pandemic. During the 2020 lockdown, she set up the charity Cook-19 which created and delivered meals to NHS workers. Angela also contributed to the Chefs at Home cookbook, which raised money for Hospitality Action.
Neil Borthwick
The French House
49 Dean Street, Soho, London, W1D 5BG
View BioNeil Borthwick
Neil Borthwick caused a sensation among London foodies when he took over the kitchen of the French House pub’s rustic, characterful first floor dining room in Soho in October 2018. You have to book in advance to bag a seat in order to sample his robust, Gallic-inspired cooking that the Guardian described as being ‘of the gods’ and might include such comforting delights as navarin of lamb with aligot potatoes, which The Times called a ‘stew of dreams’. Borthwick’s background is in fine dining, including stints at Gordon Ramsay’s Ameryilis in Glasgow, Restaurant Tom Aiken, The Square and, in France, La Maison Pic and Michel Bras (where he rose to the position of sous Chef), but he describes the French House’s more earthy food as ‘what I love best’. He first made his name as head chef of the Merchants Tavern in Shoreditch, which opened in 2013 as a collaboration with his partner Angela Hartnett whom he met when they worked together at the Connaught in the early 2000’s.

Over his 25-year career in seafood as a fishmonger, chef, restaurateur and CEO he has been a leading, respected and credible voice for seafood, a champion of British fishing and fishermen and the Southwest fish market in Brixham. His mission is to get more people enjoy British seafood in the UK, reducing exports, reducing imports, reducing waste and showing people how great our island’s seafood is.
Mitch grew up in Weston-super-Mare and it was in his grandmothers kitchen that his earliest food memories would form. He opened his first fishmongers in 1996 with the aim was to help people buy and eat the freshest and most sustainable seafood in the world. 26 years of experience later he still has the same aim. Through the Rockfish restaurants, and online seafood market, Mitch has introduced thousands of people to the incredible fish available in Southwest waters. His seafood restaurants are all located on the coast, and overlook the water. Eat at one of these restaurants and you'll enjoy seasonal seafood handpicked by our expert team and delivered fresh from Brixham quayside that very morning. Your server will let you know what's landed that day. Choose your fish and add some seasonal sides for a delicious seafood feast. On a mission to protect our oceans and conserve fish supplies for future generations, Mitch is an ambassador for the Marine Stewardship Council, and has co-founded the Devon Environment Foundation, part of the international Conservation Collective which has already issued regeneration grants to local sustainable projects in excess of £120,000.
Since 2008, The Seahorse Restaurant in Dartmouth has been a place to gather for conversation and debate and to enjoy the local seafood. Fish is delivered to the restaurant twice a day from Brixham, just a few miles away, menus can change throughout the day according to availability. Grilling fish over a charcoal fire has long been a speciality at the Seahorse as have pastas, rice and stews in the style and flavour you would find in many coastal Mediterranean restaurants.
